Maple & Pecan Cookies
Classy Cookies
These delicious maple & pecan cookies are really easy to make and are sure to be a hit with everyone! The flavor combination of maple and pecan is a classic for good reason.
Yield: 12 portions / Prep time: 10 minutes / Cooking time: 20 minutes
Ingredients

- 1 cup rolled oats, finely ground
- 1 cup whole wheat pastry flour
- ½ cup coconut oil, melted
- 1 ½ cups pecans, finely ground
- ½ cup maple syrup
- 1 tablespoon vanilla extract
- 1/8 teaspoon sea salt
- 25 pecans for decoration
Procedure

- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, combine the oats, flour, and pecans.
- In a separate bowl, whisk together the oil, maple syrup, vanilla, and sea salt.
- Mix wet ingredients into the dry mixture and stir to combine.
- Roll dough into small bowls (walnut size or smaller) and place on baking sheet.
- Press a pecan into the center of each.
- Bake for 15-20 minutes or until golden.
*My personal variations have included using 1 cup of ground pecans, followed by ¼ cup of ground cashews, and a ¼ cup of ground walnuts. I have also used 1 cup of ground pecans and a ½ cup of ground cashews. Or 1 cup pecans and 1 cup almonds. All variations taste great. On the top of the cookie, I personally like to place a chocolate chip. An almond also works well.
*Also feel free to play with using different flours. A combination of rice flour and whole wheat pastry flour is very tasty.
