Cranberry Sauce
The Holiday Classic
Cranberry sauce is wonderful on the traditional holiday turkey. However it’s a delicious addition anytime, for example over roasted root veggies. Try it as a topping for your muffin, or even just eat a spoonful for dessert. Cranberries are a very good source of vitamin C, dietary fiber and manganese. They are also a source of vitamin E, vitamin K, and copper. The major health benefit of cranberries is relieving urinary tract infections. They also help with respiratory disorders and dissolve kidney stones. Cranberries are especially beneficial to the eyes. They significantly improve symptoms of cataracts and macular degeneration. The unique tartness and flavor of cranberries is perfectly harnessed in this simple recipe. It’s sure to be a hit with everyone at the next holiday get together.

Ingredients

- 10 cups fresh cranberries
- 1 cup orange juice
- Juice of 1 lemon
- ½ cup honey
- Zest of 1 orange
Procedure

- Rinse cranberries in cold water.
- In a medium pan place all ingredients and heat until boiling. Lower heat to medium and continue cooking for about 10 minutes.
- When the cranberries start breaking and forming more of a smooth sauce consistency, remove the pan from the heat.
- Cool in a bowl and serve.
