Beet, Mandarin & Macadamia Salad
A Unique Summer Special
On a hot summers day, there’s nothing better than a Beet, Mandarin & Macadamia Salad. It is a wonderful, light, raw salad, that is easy to make, a great blood cleanser and very refreshing.
There are some really unique flavors in this salad. The mandarin segments, with their combination of sweet and sour tartness. The deep, complex color and flavor of the beetroot along with their fantastic crunchy texture. The dense, satisfying macadamia nuts provide a real something to chew on. All together, they combine into a magnificient salad that is extremely healthy on many levels, full of nutrients and most importantly tastes delicious!
Yield: 4 portions / Prep time: 10 minutes + 1 hour chilling time
Ingredients

- 2 large beets
- 1 can (12 ounce) mandarin segments in light syrup
- 1/4 cup sunflower seeds
- 1/3 cup dry roasted macadamia nuts
Procedure

- Wash the beets well and trim the edges (no need to peel if organic).
- Shred the beets in a food processor, transfer into a big mixing bowl.
- Add the mandarins with their syrup and the sunflower seeds and mix.
- Sprinkle the nuts on top.
- Cool in the fridge for an hour.
Keeps in the fridge for 3-5 days.
