Banana Bread

Brilliant Banana Bread

We make this banana bread at least once a month. It is a perfect snack, dessert, or a treat for breakfast. It takes less than 15 minutes to prepare, it’s easy to clean up afterwards and we usually make two loaves and freeze one. There are no sugar crashes and you can experiment with any of the ingredients. It will surely satisfy the taste buds of every friend or family member.

Yield: 8 portions / Prep time: 10 minutes / Cooking time: 40 minutes

 

Ingredients

    • 1 ¼ cups whole wheat flour
    • 1 cup ground flax seeds (ground sesame seeds are also a great substitute, or try half and half)
    • ½ cup oats
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • 1 egg
    • 1 teaspoon vanilla extract
    • ½ cup honey (or maple syrup)
    • ¾ cup milk (or soy milk)
    • 3 ripe bananas, mashed
    • 1 tablespoon oil (sunflower or other neutral-tasting oil)

Optional ingredients 

    • 1 cup chopped pecans, walnuts or cashews
    • 2 or 3 spoonfuls of almond butter (peanut butter is a good substitute)
    • ¼ – ½ cup shredded coconut
    • ¼ cup raisins (chocolate chips are a good substitute)
    • Sprinkled nuts or oats on top

 

Procedure

    1.  Preheat oven to 360°F.
    2.  Grease the loaf pan with the oil.
    3.  Combine the dry ingredients in a large bowl.
    4.  Whisk the egg, vanilla, honey, and milk in a separate bowl.
    5.  Add the liquid mixture to dry ingredients, stirring until just combined.
    6.  Mix in the bananas until well combined.
    7.  Add the nuts and other optional ingredients.
    8.  Bake in the oven until a toothpick or knife inserted into center comes out clean (a bit of mushy banana on the knife is ok), approximately 40 minutes.
