This enlightened kale may be the brightest food on your plate. It’s a powerhouse of nutrients and minerals that will make you shine brightly for the whole day. The whole family of dark, leafy greens should ideally be part of your meals at least once a day as they are an ingredient that it is impossible to have too much of! They provide valuable dietary fiber, many diverse minerals and vitamins and always taste delicious with very little alteration necessary. As a result, try simply cooking them as in the recipe below. However you can also try incorporating into more complex dishes. Dark, leafy greens are so versatile and forgiving to cook with that you really can’t go wrong. For example, try them as a side dish by themselves, or blending in soups for extra depth of flavour, or maybe cooking and then tossing into salads for additional texture variation, the list is endless. Enjoy discovering the range of possibilities, here’s a great start for you.

Yield: 4 Servings / Prep time: 5 minutes / Cooking time: 5 minutes

Ingredients

    • 10oz kale, (about one bunch), rinsed and chopped
    • 1 tablespoon coconut or olive oil
    • 1 cup vegetable stock
    • 1/2 cup nutritional yeast 

Procedure

    1. Heat the oil in a pan over a medium heat
    2. Add the stock and kale and cook for 5 minutes
    3. Remove the pan from the heat and add the nutritional yeast to taste. 

*Varation: Cook the kale just in stock and then once it is cooked, add 1 tablespoon of oil and the nutritional yeast. Add a dash of salt if desired.
