Cilantro Lemon Rice

We always find it important to have a grain in the house and this cilantro lemon rice can instantly be added to your favorite meals. This delicious rice dish goes well with baked tempeh, steamed vegetables and green salad. The brown rice is an extremely grounding and wholesome complete grain. The fresh herbs and lemon juice are a very healing and rejuvenating combination. Pine nuts add a deliciously satisfying boost of healthy fats and pack a lot of flavor for their size. If you have any leftovers, add it to a soup for a nice comforting boost of carbohydrates.

Yield: 4 portions / Prep time: 5 minutes / Cooking time: 25 minutes

 

Ingredients

    • 4 cups vegetable stock
    • 2 cups brown rice
    • 3 tablespoons olive oil
    • 4 cloves garlic, minced 
    • 2 teaspoons lemon zest
    • 2 tablespoons lemon juice 
    • 6 scallions, finely chopped
    • 2 cups fresh cilantro, chopped
    • ¼ cup pine nuts
    • Salt to taste

 

Procedure

    1.  In a large saucepan, bring the water to a boil.
    2.  Add the rice, olive oil, garlic, lemon zest, lemon juice and salt, and reduce to medium heat.
    3.  Stir gently, cover, and simmer slowly for about 25 minutes, or until the rice is tender.
    4.  Leave the rice covered so the steam stays in, making the rice fluffy.
    5.  Transfer the rice to a large mixing bowl. Add the cilantro, scallions, salt, and pine nuts. Combine thoroughly.
